Trees Restaurant creates Earth Hour menu | The Planner

On Saturday, 28 March, Trees Restaurant at the Townhouse Hotel will be helping to promote a more sustainable planet with their special Earth Hour menu.

With a strong commitment to “living green”, the Townhouse Hotel is host to a variety of sustainability initiatives, including a waste separation and recycling program and water and energy saving devices on site. Showing that ā€˜green’ really is their favourite colour, they will be offering a set three-course menu for R178.00pp to help promote awareness around Earth Hour 2015.

The lights will be ceremoniously switched-off, allowing guests to enjoy the evening in candlelight – starting with haddock ravioli, served in a clear mussel broth with organic vegetables and saffron aioli. This will be followed by main course, which will take the form of ā€˜a feast of free-range chicken’ – served two ways. The first, will be in the served in a Ballantine, stuffed with organic spinach, sun-dried tomato and feta.

Accompanying this will be confit chicken leg served on cauli-rice with baby vegetables and thyme chicken jus – the perfect combination for those who are trying to cut down on carbs.

Reyneke is a self-sustainable and self-supporting wine farm, with the sustainable philosophy of ā€˜waste not, want not’ – a farm that is constantly thinking of ways to re-use, re-purpose or recycle,ā€ says food and beverage manager Llewellyn Joorst.

The evening will end on a sweet note with Rooibos tea panna cotta, served on organic dried cranberry soil with organic nuts, dark chocolate cigar and a vanilla anglaise-berry shooter.
