Chef Silvio Mindrea is excited to face new challenges as the executive chef of Southern Sun Maputo’s new Evolve Restaurant.
Silvio has been with Southern Sun Maputo for about 24 years, and has built up a strong kitchen team of 14 chefs and 28 cooks to cope with the demands of providing excellent cuisine in the hotel 24 hours a day, to guests, local residents, conference delegates, and unexpected visitors.
Evolve’s menus feature imaginative meal options created by the Evolve chefs; mouth-watering dishes that have been inspired by the region’s close ties to the ocean and influenced by the local cultural mix of flavours, spices and produce.
“I discovered many years ago that the most important things to me in the preparation of dishes are freshness and texture, as well as techniques of cooking. And here in Maputo, we have amazing resources of fresh seafood and produce that allow us to create wonderful dishes that reflect the simple yet delicious Mozambican and Portuguese cuisines of this area,” says Silvio.
He attended the College of Hospitality and Tourism in Bucharest and then started his culinary career as a pastry chef at the Intercontinental Hotel in Bucharest, while also studying at the University of Economic Studies. In 1989, with revolutions sweeping through Europe, Silvio moved to Italy, and then to Germany where he worked as a chef in a variety of small restaurants and hotels.
